Prosciutto Wrapped Asparagus
Hello, friends! I don’t mean to brag or anything but my mama raised some pretty good cooks. My brother Justin runs the kitchen at a popular restaurant. My brother Scott is a beast on the grill and can make some pretty impressive dishes. And then there’s me… I do alright too. Growing up, we spent countless hours in the kitchen with mom. We’d sit on the countertops and watch her prepare meals each and every day. She taught us that it was important that we be able to feed ourselves and our family.
Today, you can find all three of us in the kitchen with mom on the holidays. My nieces have taken our place on the counters and they join in and help us prepare meals. At least once a month we all get together for a BBQ at my parent's house. Mom and dad provide the meat, one or two sides and a dessert and the rest of us brings a side dish or two each.
One of my favorite dishes that my brother prepares is Prosciutto Wrapped Asparagus. When he prepared it for Mother’s Day I asked for him to take some photos and share his recipe with ya’ll.
Asparagus Cream cheese Prosciutto (found with specialty meats in your grocery store)
Instructions: 1. First, remove the dry ends of each spear, then boil for 1-2 minutes. This blanching process will help bring the color out of the asparagus.
2. Transfer the asparagus into a bowl ice cold water - so that they cool and stop cooking.
3. Spread each slice of prosciutto with a little cream cheese. Wrap up 3-4 asparagus spears in the prosciutto, with the ends exposed.
3. Arrange spears on a lightly greased baking pan. Sprinkle with Parmesan and Bake at 350 for about 10 minutes – or until the asparagus is tender.
Isn't it glorious? I love these little guys! They are perfect as an appetizer and just as incredible when served as a side dish. These are hands down one of my brother's favorite dishes.
