Loaded Baked Potato Salad
Hey, ya'll! This is one of my favorite times of the year! I love all things BBQ and lately, I've been all about BBQ friendly side dishes. I've been in my kitchen banging out recipes like Shredded Bliss Salad, Jacked Up Asparagus, Boursin Cheese Mashed Potatoes, Prosciutto Wrapped Asparagus and Redneck Salad.
This Memorial Day I whipped up another side dish recipe. My Loaded Potato Salad features all of the flavors of the iconic loaded baked potato in salad form. I love the way the ranch dressing balances out the saltiness of the bacon. The green onions and shredded cheddar help bring a fresh element to this dish that will have your friends and family coming back for more!
3 lbs petite red potatoes, diced into 1 inch cubes
2/3 cup ranch dressing
1 cup of shredded cheddar
6 slices of bacon, cooked and chopped into small pieces
2/3 cup green onions, chopped
Salt & Pepper, to taste
Cut three pounds of petite red potatoes into 1 inch cubes. Place them in a large pot and cover the potatoes with cold water. Bring the water to a boil and allow the potatoes to cook for 10 minutes, or until fork tender.
Strain the potatoes in a colander and allow to cool.
Meanwhile, prepare 6 slices of bacon.
Once the potatoes have cooled, place them in a large bowl. Mix in the bacon, green onions, cheddar cheese and ranch dressing until well combined. Serve immediately or allow the salad to chill in the refrigerator.
I love the saltiness of the bacon, the creaminess of the ranch dressing and the bite of green onions come together to form the perfect salad. The salad is so delicious that you'll make it again and again during the hot summer months.
