Garlic Roasted Asparagus
Hey, y'all! Isn't it funny how much our taste buds change as we grow older? When I was little I hated vegetables but now that I'm a dinosaur, I love them! I love me some broccoli, carrots, potatoes. Years ago, I was convinced that I didn't like Brussels sprouts or asparagus. In fact, I don't even know if I tried them when I was younger, I just knew that both vegetables were green and weird looking and I wanted nothing to do with them. I mean, we are allowed to dislike a food simply because it looks different, right? Boy was I wrong! Slender, long, woody asparagus is by far my favorite vegetable!
I love the versatility of asparagus. Some of my favorite recipes are Jacked Up Asparagus and Proscuitto Wrapped Asparagus but nothing is better than plain old, Garlic Roasted Asparagus. It takes less than 5 minutes to prepare it and about 20 minutes to cook and I'm telling y'all, it is heaven!
Asparagus is one of those foods that you don't let sit in your fridge too long. It doesn't keep very long, so it is best to buy it a day or two before you plan on using it. Did you know that if you keep asparagus in the package you purchase in, it will go bad faster?
Tip: Remove the asparagus from the package, keeping it bound together by a rubber band. Place the asparagus upright in a large glass container or Mason jar. Place some water in the jar and store it in the refrigerator until you are ready to use it.
1 bunch of asparagus, woody ends removed
1 tbsp minced garlic
Extra-virgin olive oil
Salt and pepper, to taste
Preheat your oven to 400 degrees.
Remove the woody ends of the asparagus and line them on a baking sheet. If you hold the asparagus in your hands on by both ends and gently bend it, it will naturally snap where the woody end starts.
Generously drizzle extra-virgin olive oil over the asparagus.
Sprinkle with salt, pepper and garlic.
Roast the asparagus in the oven for 15 minutes at 400 degrees.
Remove the asparagus from the oven. Serve with your favorite entree.
