Quicky & Easy Hummus Coated Chicken (Paleo Friendly)


This one-dish Hummus Coated Chicken is the perfect go-to recipe for a quick & easy dinner. The hummus crust makes the chicken extra juicy and creates a taste that is out of this world!

Hey ya'll! I mentioned earlier this week that I've been crazy busy trying to get everything ready for my brother's baby shower. Or is it my brother's girlfriend's baby shower? Whatever the case may be, my week has been super crazy. Between working 12 hour days, recovering from sickness and prepping for the shower, I haven't had much free time. My kitchen is covered in a a hellacious amount of pink and white chocolate. It's everywhere.

Enter the quick and easy dinner idea.

It's so easy to eat crappy when life gets busy. Let's face it, it's so much easier to order a pizza or rush through the drive thru than it is to plan and make dinner and then there's the dreaded clean up on top of that. I get it y'all! That's why I have a list of quick and easy dinner ideas on hand, ready to go. Meals like Soul-Warming Stuffed Pepper Soup, Healthy Lemon Baked Chicken, Honey Garlic Chicken with Vegetables, Tender Ranch Flavored Cube Steaks and Baked Creamy Spaghetti Casserole get us through crazy days like these.

Another crazy good, crazy flavorful and crazy easy meal that I like to turn to is Hummus Coated Chicken. I don't know about you, but hummus and chicken are staples in my house. That alone makes this the perfect meal for busy nights or those nights where "I have nothing to cook". For this recipe, you can use any kind of hummus (plain, garlic, roasted pepper, jalapeno, whatevs!). You can always use any veggies you have on hand. If you haven't slathered hummus all over a chicken breast and popped it into the oven, you are truly missing out on one of the finer things in life.

Here are some of my favorite things about this meal:

  • It's created with ingredients I always have on hand.

  • It takes less than 30 minutes to cook

  • 1 pan = minimum clean up

  • It's healthy & delicious!

This is seriously the perfect meal to just throw together! You simply pound out the chicken with a meat tenderizer, cover each breast with 2 tbsp of hummus, sprinkle on the seasoning blend, throw some veggies in the pan, drizzle with olive oil and toss it into the oven for 30 minutes.

It's that easy y'all!

Ingredients: 4 chicken breasts 1/2 cup of hummus, or 2 tbsp per breast your preparing 1/4 tsp cayenne 1/2 tsp paprika 1/2 tsp cumin Assorted Veggies

Instructions:

1. Preheat oven to 425.

2. Pound out chicken breast, if needed, to get an even thickness. This will allow the breasts to have an even cooking time. Place into a 9x13 pan.

3. Coat each breast with 2 tbsp of hummus.

4. Sprinkle the seasoning blend on top.

5. Chop of veggies and place them in the pan next to the chicken. Drizzle olive oil and add salt and pepper to taste.

6. Bake 25-30 minutes, or until chicken is fully cooked.

7. Turn the broiler on and leave the chicken and vegetables under the broiler for 2 minutes.
