Hey, y'all! By now you have probably figured out I have a love affair with spaghetti squash. It has quickly come one of my favorite ingredients to work with. Once you learn How to Roast a Spaghetti Squash, you'll see just how versatile this low-carb alternative to pasta really is! You can use it to create everything from Pad Thai to traditional spaghetti. It is the perfect food for people who are gluten-free (or gluten-aware) or those that are simply watching their carbs.

When I first started making spaghetti squash, I kept it simple...I made spaghetti. In fact, I make Italian-Style Spaghetti Squash with Meatballs more than any other spaghetti squash recipe. My repertoire has expanded to other dishes like Spaghetti Squash Lasagna Bowl, Cheesy Garlic Spaghetti Squash, BBQ Chicken Stuffed Spaghetti Squash, Chicken Parmigiana Stuffed Spaghetti Squash, and Southwest Spaghetti Squash.

What is spaghetti squash?

Spaghetti squash is a delicious squash that when cooked, the insides create ribbons or strands that resemble spaghetti. It can be cooked in a variety of ways including baking, boiling, steaming, and even microwaving. It is often used as a substitute for pasta.

Is spaghetti squash keto friendly?

Spaghetti squash is very low carb, but like many foods, it is not totally carb-free. 1/2 cup of spaghetti squash contains roughly 20 calories and 5 g of carbs. So while it fits in the keto diet, you still need to watch your portion size!

This recipe is super simple, especially if you're familiar with roasting spaghetti squash. Just roast a medium-sized spaghetti squash in the oven. Once it has cooled enough to handle, scrape out the "spaghetti". Stir in some sauce and top it with meatballs and shredded cheese and stick it back into the oven until the cheese has melted.

For this recipe you can use homemade meatballs or a bag of your favorite frozen meatballs. If you're looking for a great meatball recipe, check out The Absolute Best Gluten-Free Meatball Recipe. Don't let the phrase gluten-free throw you off, these little guys are amazing! They are great for things like Honey Garlic Meatballs, Honey BBQ Meatballs, Taco Meatballs and my new favorite, Honey Sriracha Meatballs.

Kitchen Essentials:

13x9 Baking Dish

Serves 4

1 medium-size spaghetti squash

1 tbsp olive oil

1 jar of your favorite spaghetti squash

1 pound of meatballs

1 cup mozzarella

1. Preheat oven to 375 degrees. Slice the squash in half lengthwise (from stem to tip). Remove seeds. Place the squash on a 13x9 pan. Drizzle the inside of the squash with olive oil. Salt and pepper to taste. Turn flesh side down and roast in the oven for 45 minutes.

2. While the squash is roasting, prepare your meatballs according to instructions.

3. Once the squash is cool enough to handle, use a fork to scrape the spaghetti flesh creating "noodles". Place the noodles in the bottom of the 13x9 pan. Add the spaghetti sauce to the pan and stir to combine. Top the noodles with meatballs and sprinkle with cheese. Put the pan back in the oven and cook for another 10-15 minutes, or until the cheese has melted.
