Loaded Baked Potato Dip

Hey, y'all!  Welcome to the very first Saturday's Snacks post!  Each Saturday I will be sharing with you a recipe perfect for tailgating or watching the big game on the big screen.  Like most southerners, football is a big deal in our family.  Each Sunday we gather over at my parent's house to watch football in my parent's theater room.  The screen is huge- like freakin' ridiculously huge.  There's a projector that showcases the game on a screen as wide as the entire room.

 

Mom has always gone all out when it comes to football food.  There's always a ton of goodies ranging from meatball cupcakes, dips, sliders, and sandwiches.  Each week I bring along an appetizer to add to the buffet.  One of my favorite contributions is dips.  I make dips of all kinds- queso, chili cheese dip, and hot caramelized onion dip with bacon and gruyere are some of our favorites.  But  I have a special place in my heart for my Loaded Baked Potato Dip.

 

 

This dip couldn't be any easier to make.  The only cooking involved is frying up some bacon, and you could always substitute Bacon Bits if you want to make it even more simple.  Aside from the bacon, this dip is your classic dump and stir dish.  Simply combine all of the ingredients in a medium size bowl, stir it up, let it chill for a few minutes and presto!  You have an instant bowl of yumminess!

 

I love how the sour cream and ranch blend together to form the perfect backdrop for the bacon, cheese and green onions.  This dip has all of the classic flavors of the iconic baked potato blended together in a dip perfect for football season!

 

Ingredients:

16  oz sour cream

8 slices of bacon, cooked and cut into small pieces

3 green onions, sliced thin

1 cup shredded cheddar cheese

1 packet of ranch dip

 

Instructions:

 

 

 

1. In a medium size bowl combine sour cream, green onions, cheddar cheese and ranch packet.

 

 

 

2.  Fold in bacon.

 

 

3.  Garish with green onions and shredded cheese.  Chill for 30 minutes (or until ready to serve).  Enjoy with potato chips, crackers or pretzels.
