Pumpkin Energy Bites are the perfect no-bake grab-and-go snack for this season!
Hey, y'all! In case you haven't noticed, Maps & Monograms is in full fall mode! From Fall Farmhouse Finds for Less than $25 on Amazon to Cinnamon Roll Overnights Oats, Pumpkin Margaritas, and Dulce de Leche Pecan Cheesecake Dip, M&M has it all! I absolutely love all of the tastes of all, cinnamon, apples, pumpkin, yum! This is no doubt, my favorite time of year!
I've got some more pumpkin recipes up my sleeve such as Roasted Pumpkin Soup and Pumpkin Pie Overnight Oats but first, I have to share with you this super yummy, protein packed little treat I like to call Pumpkin Energy Bites.
I love making energy bites! They are simple to make and you can easily switch out the ingredients for items that you already have stashed away in the pantry. Judging by some of these ingredients (maple syrup, white chocolate, & pumpkin) you might think that these energy bites are sicky sweet but they actually aren't sweet at all. If you want them to be sweet, you could always add a little powdered sugar into the mix.
1/4 peanut butter (slightly heated)
1/4 maple syrup (or honey!)
1/4 cup chia seeds
1/4 cup white chocolate
1/4 cup dried cranberries
1/2 tsp cinnamon
1/2 cup canned pumpkin puree
1/4 tsp salt
1 tsp vanilla
2 cups quick oats (I used gluten free)
1. In a large bowl, stir the peanut butter and maple syrup until smooth. Add in the pumpkin puree, spices, salt and vanilla. Stir until combined.
2. Mix in chia seeds.
3. Fold in oats, dried cranberries and white chocolate.
4. We hands slightly and form dough into 1" to 1.5" balls. The tighter you roll them, the better.
5. Store in an airtight container in the refrigerator until you're ready to enjoy.
