This super fun, festive, colorful Mermaid Bark recipe is perfect for birthday parties!
Hey, y'all! How is your week going? I've been super busy! School is back in session after our Winter Break so I spent the morning greeting 36 smiling third graders. I've also been prepping for my brother's girlfriend's baby shower this weekend.
My brother and his girlfriend are expecting their first child, a little girl, so my kitchen is covered in pink chocolate and sugar as I prepare the goodies for the dessert table. Parties and celebrations are a big "to-do" in our family. My brothers and I inherited our tendency to throw "themed" parties. Not just any themed party either, we're talking themes on steroids.
My niece, Monster, wanted a mermaid party for her 4th birthday. My brother and sister-in-law went all out to create an under the sea theme that spread throughout the entire house. We're talking decor, food, drinks, games, outfits, etc.

When I found out Monster wanted a mermaid party, I knew exactly what I would make- multi-colored Mermaid Bark and adorable clam cookies.
I have to tell you that every girl- both young and mid-aged... errrrrr in-their-thirties alike- immediately fell in love with this stuff as soon as they saw it. We're talking like an Ariel and Prince Eric kind of love. I mean... what's not to love with the swirls of colors and shimmery candy pearls?
1 package of bright white candy melts
1 package of turquoise candy melts
1 package purple candy melts
Round pearl candies
Edible Gold Spray
1. Pour each color of candy melts into individual microwave-safe bowls.
2. Microwave the candy melts in 30-second increments. Stir and repeat until the melts are smooth.
3. Line a baking sheet with wax paper.
4. Create dollops of each of the melted colors all over the prepared baking sheet. Think Jackson Pollock!
5. Swirl the colors together. Careful not to over-swirl them- you don't want them mixed completely together! Think Van Gogh's "The Starry Night".
6. Spray the bark with edible gold spray. Scatter sprinkles and candy pearls on the top.
7. Refrigerate for 20 minutes, or until the chocolate has set.
8. When ready to serve, use your hand to break the chocolate into pieces.
